Happy Halloween!

I hope everyone has a fun, safe, and spooky Halloween!! We are going Trick or Treating with friends tomorrow and I hope to get some cute Halloween pictures to share later this weekend.

Today is extremely nice outside. It feels like bath water. It really does. It is 80 degrees, humid, and a little windy. The weather is up in the air for tomorrow. It was suppose to rain, now it just looks cloudy. Lets hope fo rno rain- it will be a really wet kickball game if it does! So I wanted to make sure I got some cute pictures of Madison in her costume.

Chicken Marsala




Ingredients

3 Chicken cutlets cut in half (to make them thinner)
olive oil
flour
2 Tablespoons butter
fresh mushrooms
1 cup beef broth
1 cup chicken gravy
1/4 cup Marsala cooking wine

Directions

In 12 inch pan add a little olive oil. Cover chicken in flour shake off and fry up in the pan until cooked all the way. Put the chicken on a plate to the side. In same pan (don't wash it, just empty out the olive oil) add 2 tablespoons of butter and add the mushrooms. Cook about 8 minutes until done. Add 1 cup of beef broth, 1 cup of chicken gravy, 1/4 cup Marsala wine. Then put the chicken back in the pan, cover, and cook about 15 minutes on low. Enjoy!!

Stick a Fork in It!

For the past few weeks Madison has been a very picky eater. She would love corn, pasta, or cheese one day and hate it the next. Meal times have been a struggle and last week was even worse because she was sick and ate even less. I know this is normal and you just reintroduce these food and she will like them again one day. But, it can be very frustrating when you child will not eat. Well, this morning I decided to make her pancakes and she LOVED them!! Yay!! She ate a good amount and this is also a food that is easy to stick a fork into. I even caught a little on video for you! Enjoy!!

Gingers Home

Since the dogs got a new bed, Ginger claims this one as her own now. I just cut away the shredded door. It is a great little get a way spot for her to hind from the dogs and Madison.

Keeping the Tootsies Warm

On a recent Target Shopping trip we bought Madison her first pair of slippers. I think she likes them. They are a tad big right now, but in a month or so I am sure they will fit better.
