Meatless March {Sunday March 13th} Black Bean Patties, Creamy Cilantro Dip, Guacamole, and Roasted Green Beans

Black Bean Patties

•1 can black beans, drained

•1 egg

•1 cup Panko (Japanese bread crumbs)

•1/2 bell pepper, diced

•1/4 cup onion, diced

•1 clove garlic, minced

•1/4 cup chopped cilantro

•Olive oil

•Extra Panko for breading

1.Saute onion, garlic and bell pepper in 2 Tb olive oil until onions are translucent.

2. Smush your beans.

3. Once you smushed and sauted combine beans, onion mixture, egg, Panko and cilantro.

4. In a medium pan, heat 5 Tb olive oil over medium heat. While heating, form your patties approx 1/2 cup mixture per patty. Bread patties with Panko lightly and place in oil.

Serve hot.

Creamy Cilantro Dip (I cut this recipe in half).

•16 oz. sour cream


•2 cups shredded cheese

•1 Tb taco seasoning

•Chili powder, to taste

Mix all together and enjoy. It is great with chips too.

3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)
1.In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.

Roasted Green Beans

1 lb fresh green beans

a little olive oil

a little salt

a little pepper

Preheat oven to 425. Add green beans to a bowl, drizzle a little olive oil. Mix them to coat. Lay them on a baking sheet and sprinkle with salt and pepper. Roast for 20 min, flipping once during cooking.
