Yummy!!

(I didn't make the frosting recipe that is on the website, but that looks yummy too!)

Chocolate Lover’s Cupcakes
recipe from How Sweet It Is

1 1/8 cups all purpose flour
1/4 cup unsweetened cocoa powder
1 1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1/2 cup fat-free milk
3 tablespoons heavy cream
1/2 cup butter, melted and cooled
2 tablespoons sour cream
2/3 cup milk chocolate chips
Preheat oven to 350 degrees F.
In a bowl, whisk egg and sugar until smooth and no lumps remain. Add milk, cream and vanilla, and mix until combined. Stir in sour cream. Sift dry ingredients together and add to wet mixture. Mix until batter is smooth. Add in melted butter and stir until smooth. Fold in chocolate chips. Line a muffin tin with liners and using a 1/4 cup measure, add batter to each cup. Bake for 15-18 minutes. Let cool before frosting.


 Funfetti Sandwich Cookies- These are so good!!! I made these for Madison's gymnastic meet and for our house church.



Funfetti Sandwich Cookies
recipe from Baked Perfection

makes approximately 24 sandwich cookies

1 (18.25) package Funfetti Cake
2 eggs
1/3 cup vegetable oil
2 tablespoons milk
1 teaspoon vanilla extract

Preheat oven to 375 degrees F. Pour cake mix into a large bowl. Stir in eggs, oil, milk, and vanilla until combined. Drop teaspoons of dough onto an ungreased cookie sheet. Bake 7-9 minutes in the preheated oven. The bottoms will be light brown. Move cookies to a cooling rack, cool completely before assembling.

Frost bottom side of half the cookies. Top with unfrosted cookie. Roll edges in assorted sprinkles.

Very Vanilla Frosting
recipe by Baked Perfection

1 stick of butter, softened
3 cups powdered sugar
pinch of salt
1 1/2 tablespoons vanilla extract
2 tablespoons milk

Beat butter and vanilla until creamy. Add salt. Add powdered sugar 1 cup at a time, beating until combined. Add milk 1 tablespoon at a time until you reach desired consistency



 After I made the ones above, I had to try chocolate and peanut butter frosting. I used THIS recipe for the frosting and a chocolate boxed caked mix.

Fluffy Peanut Butter Frosting


Ingredients

  • 1/2 cup butter, softened
  • 1 cup creamy peanut butter
  • 3 tablespoons milk, or as needed
  • 2 cups confectioners' sugar

Directions

  1. Place the butter and peanut butter into a medium bowl, and beat with an electric mixer. Gradually mix in the sugar, and when it starts to get thick, incorporate milk one tablespoon at a time until all of the sugar is mixed in and the frosting is thick and spreadable. Beat for at least 3 minutes for it to get good and fluffy.






Over Memorial Day we had a little BBQ and celebration for a friend being promoted to Captain and a few other guys from JR's section at AFIT. I wish I thought of these little cupcakes when JR got promoted!! They turned out just how I pictured them with the capt. rank!  :O)






Madison and I made fruit kabobs for her school party.
